We cook only traditional dishes, using the ingredients that come from these lands. The recipes are those handed down by Filomena who know how to combine "poor" products such as vegetables, local mushrooms, and poultry with valuable products such as truffles and game that has peaks of excellence with wild boar, hare, roe deer.
The cheeses come from local farmers and so are the cured meats. The pasta and desserts are homemade, dinners and snacks are always appetizing also thanks to the presence of "crostoli", a kind of rustic "piadina" cooked on the grill that go beautifully with ham, pork loin, salami and mixed sausages of pork and wild boar. The wine comes from the hills of Urbino and S. Sepolcro. Tonino's grappa is a myth.
